Ginger Pears with Rum

INGREDIENTS

6 fresh or canned pears
3 tablespoons sugar
6 tablespoons water
6 pieces stem ginger
3 tablespoons syrup from the jar of ginger
1 teaspoon vanilla
1/4 cup dark rum

Poach the fresh pears or drain the canned pears.

Make a syrup by combining the remaining ingredients except the rum. Cook the syrup for 5 minutes over a moderate heat. Pour the syrup around the pears and chill for several hours.

Drain the pears and flame them at the table with the rum.
