Crepes with Chocolate Chestnut Butter

INGREDIENTS

1 teaspoon water
1 tablespoon sugar
12 roasted whole chestnuts, quartered (from a jar is fine)
6 tablespoons unsalted butter, softened
3 tablespoons confectioners' sugar
2-ounces bittersweet chocolate, chopped and melted
Pinch of salt

Prepare 10 crepes. If they have been prepared ahead of time, just before serving, wrap them in foil and reheat for about 10 minutes in a 325 degree oven.

Preheat oven to 250 degrees.

Combine the water and sugar in a microwave-safe bowl. Cover and heat on high in the microwave for 10 seconds. Add the chestnuts to the hot syrup and toss.

Place the chestnuts on a baking sheet and roast 10 minutes, turning once. Remove from oven and cool.

With an electric mixer, beat butter for about 5 minutes. Add the confectioners' sugar and salt and beat until smooth. On low speed, blend in the melted chocolate. Stir in the chestnuts.

TO SERVE - Place about 2 tablespoons of the chocolate/chestnut butter on each warmed crepe. Fold into a triangle and serve.
