Bananas Flambé

INGREDIENTS 6 ripe bananas
2 tablespoons butter
6 tablespoons brown sugar
1/4 teaspoon cinnamon
1/4 teaspoon almond extract
1/4 cup banana liqueur or rumMelt the butter in a chafing dish and add the brown sugar. Let the sugar melt.
Slice each banana lengthwise and lay in the pan. Cook the bananas 3 minutes on each side. Add almond extract. Sprinkle bananas with cinnamon.
Flame the liqueur or rum and pour the flames over the fruit. Spoon the sauce over the bananas as they are served.
