Apple Crepes with Roquefort Cheese

INGREDIENTS

2 pounds cooking apples
2 tablespoons butter
1 tablespoon sugar
1/2 pound Roquefort cheese
1 to 2 tablespoons cream

Peel, core and cut apples into thin slices. Melt 2 tablespoons butter in a frying pan. Add the apples. Sprinkle the apples with sugar and cook until the apples are lightlly browned but not soft.

Put the cheese in a bowl; add the cream and work into a paste using the back of a wooden spoon.

Spread out the crepes and cover the surface of each crepe with the Roquefort cheese. Put 1 to 2 tabalespoons sautéed apple slices in each crepe and roll or fold the crepes into envelopes.

Lay the crepes on a buttered ovenproof dish, dot with 1 tablespoon butter and bake in a preheated 400 degree oven for 15 minutes.

Serve with a Bechamel sauce. Decorate the dish with apple slices.
