These pretty little cookies look just perfect on a lace paper doily at a bake sale. Use several different colors of jam to get the real jewel effect.
INGREDIENTS
1/2 cup butter, softened
1/4 cup packed light brown sugar
1 large egg, separated
1 teaspoon vanilla
1 cup all-purpose flour, sifted
1 cup finely chopped walnuts or pecans
2 tablespoons strawberry preserves or preserves of your choiceCombine the butter, sugar, egg yolk, and vanilla in a medium bowl using an electric mixer; mix until smooth. Stir in flour just until combined. Refrigerate about 30 minutes.
Preheat the oven to 375 degrees.
Roll the dough into balls about 1-inch in diameter. Dip in slightly beaten egg white, then roll in walnuts. Place 1-inch apart on ungreased cookie sheets.
With thimble or thumb, press center of each cookies. Bake 10 to 12 minutes or until golden brown. Remove to wire rack to cool.
Place 1/4 teaspoon preserves in center of each cookie.
Makes 1-1/2 dozen
