Chocolate Chip Cookie Bars

INGREDIENTS

2 cups sifted all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup (1-1/2 sticks) unsalted butter, softened
3/4 cup firmly packed light brown sugar
1/2 cup granulated sugar
1 large egg
2 teaspoons pure vanilla extract
1 cup milk-chocolate chips
1 cup semisweet chocolate chips

Heat oven to 350 degrees and place rack in center. In a medium bowl, combine flour, baking soda and salt; set aside.

In a mixer bowl, beat together butter and sugars on medium speed, scraping down sides of bowl occasionally, until light and fluffy, about 2 minutes. Add egg and extract; beat until combined well. Reduce speed to low and beat in flour mixture until just combined. Stir in chocolate chips.

Press dough into an 11 x 8-inch tart pan with a removable bottom; place on baking sheet. Bake until golden brown around edges and a toothpick inserted in center comes out with just a few moist crumbs clinging to it, 25 to 30 minutes. Do Not Overbake! Transfer pan to a wire rack. When cool enough to handle, remove sides of pan, cut into bars and serve.

Makes 18 bars

Store in an airtight container at room temperature up to 3 days.
