Carrot Cookies

INGREDIENTS 3/4 cup shortening
3/4 cup sugar
2 large eggs
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup cooked, mashed carrots
1/8 teaspoon nutmeg
1 teaspoon vanilla
Confectioners' sugarPreheat oven to 350 degrees.
Cream the shortening and sugar in a large bowl. Add the eggs, flour, baking powder and salt.
Stir in the carrots, nutmeg and vanilla; mix well.
Drop mixture by tablespoons onto a baking sheet. Bake 20 minutes or until slightly brown. Sprinkle with confectioners' sugar while still warm.
