Butterscotch Bars

These quick-and-easy bars with the texture of a cookie will satisfy your sweet tooth.

INGREDIENTS

1 stick butter, softened
2 cups packed light brown sugar
2 large eggs, lightly beaten
1 cup all-purpose flour
1 teaspoon baking powder
1/2 cup chopped pecans 1 teaspoon vanilla
Powdered sugar

Preheat oven to 350 degrees.

Cream the butter and the sugar in a large bowl; add the eggs and mix well.

Sift together the flour and baking powder. Add to the creamed mixture. Stir in the nuts and vanilla.

Spoon the mixture into a greased and floured 13 x 9-inch pan. Bake for 25 to 30 minutes or until done. Sprinkle with the powdered sugar. Cool, then cut into squares to serve.

Makes 24 bars
