Italian Minestrone Soup

INGREDIENTS

1 (20-ounce) package extra-lean ground turkey breast
1 tablespoon light olive oil
1 cup shredded carrots
1 green bell pepper, diced
1 cup diced zucchini
1 cup diced yellow squash
1/2 cup diced onions
3 cups water
1 tablespoon beef-flavored bouillon granules
1 tablespoons dried Italian seasoning
1 (16-ounce) jar salsa
1 (15-ounce) can pinto beans, drained and rinsed
1 (15-ounce) can kidney beans, drained and rinsed

In a large skillet, over medium heat, crumble and brown ground turkey in olive oil. Add vegetables to pan and cook 5 minutes or until onions are tender.

Place the turkey and vegetables in a slow cooker. Add water, beef granules, Italian seasoning, salsa, and beans. Cover and cook on LOW heat setting 4 hours.
