INGREDIENTS

3 to 4 boneless chicken breast halves, cut in strips
1 can (15-ounces) corn, drained
1 can (15-ounces) black beans, rinsed and drained
1 tablespoon ground cumin
1 teaspoon chili powder
1 onion, halved and thinly sliced
1 green pepper, cut in strips
1 can (14-ounces) tomatoes, chopped
1 can (6-ounces) tomato paste

Combine all ingredients; mix well. Cover and cook on LOW for 5 to 6 hours.

Garnish with shredded cheese, if desired. Serve with warmed tortillas, or over rice.
