Aztec Pork Tacos

INGREDIENTS

1 (2-pound) boneless pork loin roast, cut into small cubes
1 onion, chopped
1 (4.5-ounce) can diced green chilies
1 (1.25-ounce) package Taco Seasoning Mix
2 tablespoons water
1 tablespoon brown sugar
8 Fajita-Style Flour Tortillas
1 cup shredded Colby Jack cheese

Toppings - shredded lettuce, chopped tomato, sliced ripe olives or sour cream

In a slow cooker, combine pork, onion, green chilies, seasoning mix, water, and brown sugar. Mix well. Cover and cook on LOW setting 6 to 7 hours or until pork is very tender.

With 2 forks, lightly shred the pork. With a slotted spoon, place pork mixture on tortillas. Top with cheese and toppings, as desired.
