Lemon Cheesecake

INGREDIENTS

1/4 cup lemon juice
12 ounces cream cheese, softened
2 eggs, beaten
3/4 cup sugar
1 (9-inch) graham cracker pie crust

TOPPING

1 tablespoon lemon peel
1 tablespoon sugar
1 cup sour cream

Combine lemon juice and cream cheese. Cream well, then add eggs and sugar and beat until fluffy - pour into graham cracker pie crust. Bake 20 to 25 minutes at 350 degrees.

Remove from oven - cool 5 minutes - top with lemon peel, sugar and sour cream - spoon on carefully - bake 10 minutes more at 350 degrees. Chill at least 5 hours before serving.
