Macaroni and Sausage Casserole

INGREDIENTS 4 cups hot cooked elbow macaroni
1 pound sweet or hot Italian sausage, casings removed
¼ pound ham, diced
2 tablespoons finely chopped red pepper
2 tablespoons finely chopped green pepper
2 green onions, chopped
1 jar (26 ounces) spaghetti sauce
2 large eggs
2 cups half-and-half
¼ cup grated Parmesan cheese
1 cup (4-ounces) shredded Monterey Jack cheesePreheat oven to 350 degrees. In bottom of shallow 2-quart casserole, place macaroni. In medium saucepan, over medium heat, brown sausage 5 minutes, breaking into small pieces with spoon. Add ham, red and green pepper and green onions; cook 3 minutes longer. Add spaghetti sauce; mix well. Spoon sauce over macaroni.
In medium bowl, beat eggs with half-and-half and Parmesan cheese. Pour over meat sauce; sprinkle with Monterey Jack cheese. Bake 30 minutes, or until set and lightly golden.
Makes 8 to 10 servings
