Hungarian Sausage Skillet

INGREDIENTS

2 medium-size sweet green peppers
2 medium-size onions
1 tablespoon vegetable oil
1 tablespoon Hungarian paprika
1 can (16-ounces) whole tomatoes, undrained
1/8 teaspoon pepper
1 pound kielbasa, cut into 4 pieces
2 tablespoons chopped parsley

Halve and seed the green peppers; cut each pepper into 8 wedges. Halve the onions; cut each onion into 8 wedges.

Sauté the green pepper and onion in the oil in a large skillet for 3 minutes, stirring often; be careful not to brown the vegetables. Sprinkle the vegetables with the paprika; cook for 1 minute, stirring the mixture constantly. Add the tomatoes with their liquid and the pepper. Bring the mixture to boiling. Add the kielbasa.

Lower the heat, cover the skillet and cook for 10 minutes or until the kielbasa is heated through. Sprinkle the sausage mixture with the parsley.
