Baked Cheeseburger Casserole

This dish can be made ahead and refrigerated overnight or frozen.

INGREDIENTS

2 tablespoons butter
6 slices white bread, toasted
1 pound lean ground beef
1 small yellow onion, peeled and chopped
1/4 cup chopped celery
1 tablespoon prepared yellow mustard
1 teaspoon salt
1 cup shredded sharp Cheddar cheese (about 4 ounces)
1 egg
3/4 cup milk
1/8 teaspoon dry mustard
1/4 teaspoon paprika

Preheat the oven to 350 degrees. Spread the butter on both sides of the bread, cut the slices in half diagonally, and set aside.

Heat a heavy 9 or 10-inch skillet over moderate heat. Add the beef, onion, celery, prepared mustard, and 1/2 teaspoon of the salt, and cook, uncovered, stirring occasionally, until the beef has browned - about 5 minutes.

In a buttered 9 x 9 x 2-inch baking dish, place alternate layers of toast, beef mixture, and cheese.

In a small bowl, beat the egg, then stir in the milk, dry mustard and the remaining salt. Pour the mixture over the cheese, sprinkle with the paprika, and bake, uncovered, for 25 minutes.
