Chicken and Broccoli Casserole

INGREDIENTS 2 (10-ounce) packages frozen broccoli spears
2 or 3 boneless, skinless chicken breasts
2 cans Cream of Chicken soup
2 cups Longhorn or Cheddar cheese, shredded
Flavored stuffing mix of choicePreheat oven to 350 degrees.
Partially cook broccoli spears. Drain and place in the bottom of a buttered 13 x 9-inch baking dish.
Cook chicken breasts either by frying or baking, whichever you prefer. Cut cooked chicken in thin strips or chunks and layer on top of the broccoli.
Spread soup, undiluted, over chicken. Sprinkle cheese over chicken, reserving 1/4 cup. Prepare stuffing mix as directed on package and spread over cheese. Top with remaining cheese.
Bake at 350 degrees, uncovered, for about 30 minutes or until heated through and bubbly.
Makes 6 to 8 servings
