Ground Beef and Vegetable Meal

INGREDIENTS

1 pound lean ground beef
1 large onion, chopped
1/4 cup butter
4 stalks celery, sliced thin
2 large carrots, sliced
2 cups beef broth
1/3 cup uncooked rice
2 cups green beans
1 teaspoon salt

Melt the butter in a hot skillet, add the ground beef and onion, brown over medium heat, stirring until no pink remains. Add the celery, carrots, cabbage, and green beans and cook, until the vegetables begin to get tender - about 5 to 10 minutes.

Pour into a buttered casserole dish, add the broth, rice and salt, stir to combine. Bake at 350 degrees for 20 to 25 minutes.
