Neiman Marcus Lemon Bars

INGREDIENTS

CRUST

2 cups flour
1 cup butter
1/2 cup powdered sugar

FILLING

4 eggs, beaten
1/2 cup lemon juice
1/2 teaspoon baking powder
2 cups sugar
1/4 cup flour
Grated lemon rind

CRUST: Combine sugar, flour and butter for crust. Use knife to cut butter. Pat into a 8 x 12 x 12-inch or 9 x 13-inch baking pan. Bake at 350 degrees for 20 minutes until lightly brown. Remove and cool.

FILLING: Combine eggs, sugar and lemon juice and beat well. Add baking powder and flour; beat until smooth. Pour into pan over crust. Sprinkle grated lemon rind over top.

Bake 25 minutes at 350 degrees or until cake pulls away from sides.

Makes 15 to 20 servings
