Coconut Layer Cake

If you cannot find Swans Down Cake Flour, use another brand of Cake Flour....I think this recipe was from the 50's or 60's.
2 cups sifted Swan's Down Cake Flour
2 teaspoons Calumet baking powder
1/2 teaspoon salt
2/3 cup butter or shortening
1 cup sugar
3 egg yolks, well beaten
1/3 cup milk
3 egg whites, stiffly beaten
1 teaspoon vanilla
1 can coconut
Sift flour once; measure. Add baking powder and salt; sift together 3 times.
Cream butter thoroughly and add sugar gradually; cream together until light and fluffy. Add egg yolks; then flour, alternately with milk, a small amount at a time. Beat after each addition until smooth. Add vanilla and fold in beaten egg whites.
Bake in two 9-inch pans in moderate, 375 degree oven, for 25 to 30 minutes. Remove from oven and cool on wire racks.
Spread "Seven Minute Frosting" over cake and sprinkle with coconut.Seven-Minute Frosting
