Cajun Potato Cakes

FROM: Cajun Cuisine INGREDIENTS
5 pounds red potatoes, peeled and chopped
Salt, black pepper, and cayenne pepper, to taste
1 onion, grated
2 eggs
Flour
Oil for fryingBoil potatoes in salted water to cover about 20 minutes. Drain potatoes and mash well, adding salt, black pepper, cayenne pepper, onion, and eggs; mix well.
Shape into cakes about 2-inches in diameter and 1/2-inch thick; roll in flour.
Place in refrigerator overnight.
Re-dust with flour; fry in 1/2-inch oil in a nonstick skillet turning once until brown on each side.
Makes 24 cakes
