FROM: Cajun Cuisine Couche-Couche was commonly served in the Acadian homes with milk or with sausage and a rusty gravy or syrup.
INGREDIENTS
2 cups corn meal
1-1/2 teaspoons salt
1 teaspoon baking powder
1-1/2 cups milk
1/2 cup oilMix corn meal, salt, baking powder and milk; heat oil on medium heat in a heavy pot. Add corn meal mixture to hot oil and let it form a crust; about 5 minutes; stir, lower heat, cover and cook 15 minutes.
Serve with milk as a cereal or pour sugar cane syrup over the top; it may also be served with Sucre Brule.
