Corn Pudding

INGREDIENTS

3 tablespoons butter
1/4 cup chopped onion
1/2 bell pepper, chopped
2 cups fresh corn or 2 cups canned corn, drained
2 tablespoons sugar
1 teaspoon salt
Black pepper, to taste
1/2 cup grated Cheddar cheese
3 eggs, beaten

Melt butter in skillet; sauté onion and bell pepper in butter until onions are transparent.

Add corn, sugar, salt and black pepper and cook 15 to 20 minutes on medium-low heat; cool slightly and add cheese and eggs.

Place in a casserole dish and bake at 350 degrees for 35 minutes.

Makes 6 servings
