Chicken Sauté Aux Gros Onions (Chicken Smothered In Onions)

2 large chickens, cut into serving-size pieces
Salt and cayenne pepper, to taste
1 cup oil
1/3 cup flour
2 onions, sliced thin
1 small bell pepper, choppedSeason chicken with salt and cayenne pepper and brown in oil, removing pieces as they are brown to make room for the remaining chicken. Sprinkle flour on chicken pieces as they are browning.
When all the chicken is brown, return all the pieces to the pot and add onions and bell pepper. Cover the pot and cook on low heat about 1 hour or until chicken is tender, adding small amounts of water as necessary to prevent sticking.
When ready to serve, you might want to add a small amount of water to make a gravy. Serve with cooked rice.
