Chicken-Okra Gumbo

INGREDIENTS

1 chicken, cut into serving size pieces
Salt, black pepper, and cayenne pepper to taste
1/4 cup oil
2-1/2 pounds fresh okra, cut into 1/2-inch pieces, or 2 (16-ounce) cans okra
2 onions, chopped
1 clove garlic, minced
1/4 cup flour
1 quart water

Season chicken with salt, black pepper, and cayenne pepper; brown in oil in a large, heavy pot. Remove chicken as it browns.

Add okra, onions and garlic to the pot and sprinkle flour over the top; stir constantly and cook over low heat until oil starts to rise to the top, about 20 minutes.

Add chicken and water and simmer until chicken is tender and the gumbo is the consistency of a cream soup, about 1 hour.

Serve over cooked rice in soup bowls.
