Chicken Gumbo File

INGREDIENTS

3/4 cup oil
1/2 cup flour
1 onion, chopped
1/4 cup chopped celery
1 chicken, cut into serving pieces
6 cups hot water
2 tablespoons salt
2 tablespoons black pepper
1/2 cup chopped parsley
1/2 cup chopped green onions
2 dozen fresh oysters
1/2 teaspoon Gumbo Filé

In a large, heavy pot, make a dark brown roux with 1/2 of of oil and flour. Add onions and celery and cook until onions are transparent.

In a large skillet, brown chicken in the remaining 1/4 cup of oil; when brown add chicken to roux and cooked vegetables.

Add hot water slowly, stirring well to dissolve roux; season with salt and pepper and cook on low heat until chicken is tender, about 45 minutes.

Add parsley, green onions, and oysters; cook only until oysters start to curl at the edges, about 5 minutes. Remove from heat; add filé and serve over cooked rice in soup bowls.

Makes 4 to 6 servings
