Butter Beans

INGREDIENTS

2 onions, chopped
1 clove garlic, chopped
1/2 cup bacon drippings
Salt and cayenne pepper, to taste
1 ham bone or 1/2 pound ham
1/2 cup chopped green onions
1/2 cup chopped parsley
2-1/2 pounds fresh or dried butter beans
2-1/2 quarts water

Sauté onions and garlic in bacon drippings until onions are transparent; add remaining ingredients.

Bring to a boil, lower heat and simmer until beans are tender and creamy, about 45 minutes for fresh beans and 1-1/2 hours for dried. (It may be necessary to add more water if beans start to stick or become dry).
