Boudin Balls

FROM: Cajun Cuisine INGREDIENTS
2 pounds Boudin
2 eggs, beaten
Bread crumbs, seasoned with salt and cayenne pepper
Oil for fryingRemove boudin from casing; shape mixture into balls about the size of a walnut.
Dip in eggs and then into seasoned bread crumbs.
Deep fat fry at 375 degrees until golden brown; drain on paper towels.
Makes about 4 dozen
