FROM: Cajun Cuisine INGREDIENTS
2 cups sifted flour
4 teaspoons baking powder
3/4 teaspoon salt
1/4 cup shortening or butter
2/3 cup milkSift all dry ingredients together; cut in shortening or butter until mixture resembles coarse corn meal.
Add milk and mix briefly or until dry ingredients are moistened.
Place on a floured board and knead gently about 10 times; roll out to about 1/2-inch thickness. Cut into rounds with biscuit cutter.
Place on baking sheet and bake at 450 degrees about 10 minutes or until golden brown.
Makes 2 dozen biscuits
