Fudgey Brownies 2

INGREDIENTS

3/4 cup cocoa
1/2 teaspoon baking soda
2/3 cup vegetable oil
1/2 cup boiling water
2 cups sugar
2 eggs
1-1/3 cups unsifted flour
1 teaspoon vanilla extract*
1/4 teaspoon salt
8 ounces chopped nuts

Stir cocoa and baking soda in mixing bowl. Blend in 1/3 cup oil. Add boiling water; stir until mixture thickens. Stir in sugar, eggs, and remaining 1/3 cup oil; stir until smooth. Add flour, vanilla and salt; blend completely. Stir in nuts.

Pour into lightly greased 13 x 9-inch baking pan or two 8-inch square baking pans. Bake at 350 degrees for 35 to 40 minutes for oblong pan and 30 to 32 minutes for square pans. Cool; frost if desired./p>

*NOTE -   Can use 1/2 teaspoon vanilla and 1/2 teaspoon almond extract.
