Frito Chili Pie Casserole

Did you know the very first Fritos were made with an old converted potato ricer? Mrs. Daisy Dean Doolin (mother of Elmer Doolin, the founder of the Frito Company) was the cook and Elmer was the route salesman for the corn chips. Nobody seems to know just when some talented cook combined Fritos and chili in this casserole dish, but it's Fritos' most-asked-for recipe.

INGREDIENTS

3 cups Fritos Brand Corn Chips
1 large onion, chopped
1 (19-ounce) can chili
1 cup grated American cheese

Place 2 cups of Fritos Brand Corn Chips in a baking dish. Arrange chopped onion and half of grated cheese on the corn chips. Pour chili over onion and cheese. Top with remaining corn chips and grated cheese.

Bake at 350 degrees for 15 to 20 minutes.

Makes 4 to 6 servings
