Lemon-Beer Filling

A tart filling to spread between 2 layers of an 8 or 9-inch cake.

INGREDIENTS

1/2 cup sugar
2 tablespoons cornstarch
1/8 teaspoon salt
3/4 cup beer
2 teaspoons grated lemon peel
2 tablespoons lemon juice
2 egg yolks

In top of a double-boiler, combine sugar, cornstarch, and salt. Stir in beer. Cook over direct heat, stirring constantly, until thickened and clear.

Stir in lemon peel and juice.

Add a little hot mixture to egg yolks; return to double boiler top. Cook over hot water, stirring constantly, for 4 to 5 minutes. Cool before spreading on cake.

Makes about 1 cup
