Herbed Tomato Sauce

Serve this tangy sauce with meat, poultry, fish, eggs, vegetables, or in casseroles.
INGREDIENTS
1 medium onion, chopped
1 garlic clove, minced
1 tablespoon oil
1 tablespoon minced fresh parsley
2 teaspoons sugar
1/2 teaspoon salt
1/2 teaspoon basil
1/4 teaspoon oregano
Dash of pepper
1 can or bottle (12 ounces) beer
1 can (6-ounces) tomato pasteSauté onion and garlic in oil until soft. Stir in seasonings.
Add beer and tomato paste. Slowly simmer 25 to 30 minutes.
Makes about 2 cups
