Hash Brown Potatoes

The potatoes absorb beer while boiling, giving the dish an unusual flavor.

INGREDIENTS

6 medium boiling potatoes (2 pounds), pared and cubed
1 can or bottle (12 ounces) beer
1/3 cup chopped onion
1/3 cup chopped green pepper
1/4 cup butter
1/2 teaspoon salt
Dash of pepper

In a covered saucepan, boil potatoes in beer until just tender, but not mushy. Remove potatoes with a slotted spoon; chop finely.

Add onion and green pepper to saucepan. Add water, if needed, to just cover. Simmer, uncovered, about 5 minutes, or until tender. Drain. Mix with potatoes, salt, and pepper.

In a skillet, heat butter until very hot and beginning to brown. Add potato mixture. Cook over medium high heat, turning occasionally, until browned.
