Baked Green Rice

INGREDIENTS

3 cups hot cooked rice
2 cups (8-ounces) shredded Monterey Jack or mild Cheddar cheese
1/3 cup butter
1 can (4-ounces) green chilies, drained, seeded, and chopped
1 cup finely chopped parsley
1 large onion, chopped
1 teaspoon salt
1/4 teaspoon pepper
2 eggs, beaten
1 cup milk

Combine hot rice with cheese and butter. Toss until well mixed. Add chilies, parsley, onion, salt, and pepper; mix.

Mix eggs and milk; stir into rice mixture. Turn into a buttered 2-quart baking dish.

Cover and bake at 350 degrees for 30 minutes. Uncover; bake 10 minutes more.
