Glazed Sweet Potatoes

A sweet beer glaze zips up this healthful vegetable.

INGREDIENTS

2/3 cup packed brown sugar
1/2 cup beer
1/4 cup chopped walnuts
1 tablespoon orange juice
2 teaspoons cornstarch
1/2 teaspoon grated orange peel
1/4 teaspoon salt
1 can (22-ounces) sweet potatoes or yams, drained

In a saucepan, combine all ingredients except sweet potatoes. Cook, stirring constantly, until thickened and bubbly.

Cut sweet potatoes in chunks; add to glaze. Stir gently until heated through and lightly glazed.

Makes 4 to 6 servings
