Hot German Beer Soup (Heisse Biersuppe)

INGREDIENTS

3 cans or bottles (12-ounces each) beer
2 to 4 tablespoons sugar
2 egg yolks
1 cup dairy sour cream
1/4 cup flour
1/2 teaspoon cinnamon
1/4 teaspoon salt
Dash pepper
4 large slices rye bread
1/2 cup shredded Muenster or brick cheese

In a large, heavy saucepan, heat beer and sugar until sugar dissolves.

Beat egg yolks, sour cream, flour, cinnamon, salt, and pepper until smooth. Add a little hot beer mixture; blend.

Gradually stir into hot beer. Cook slowly, stirring constantly, until thickened.

With bottom of beer can or a biscuit cutter, cut rounds out of rye bread; sprinkle with cheese. Broil just until melted.

Pour soup into small bowls; top with cheesy rye rounds.
