Currant-Apple Fritters

Serve as a hot dessert sprinkled with confectioners' sugar. Or top with syrup and serve for breakfast.

INGREDIENTS

1 cup all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup beer
1/2 cup currants
1/2 cup chopped pared apple
2 eggs, slightly beaten
1 teaspoon oil
Fat for deep frying
Confectioners' sugar

Combine flour, baking powder, cinnamon, and salt. Add beer, currants, apple, eggs, and oil. Stir to blend well.

Drop by rounded teaspoonfuls into hot deep fat heated to 365 degrees. Fry until browned. Drain on paper towels.

Keep hot in oven until serving time. While still hot, roll in confectioners' sugar.
