Cucumber Salad

INGREDIENTS

2 medium cucumbers
1/2 cup cider vinegar
1/3 cup water
1/3 cup sugar
1/2 teaspoon salt
Dash of white pepper
2 tablespoons minced fresh parsley

Score cucumbers by pulling tines of fork lengthwise down each cucumber. Cut into very thin slices; put into a bowl.

Mix vinegar, water, sugar, salt, and pepper. Pour over cucumbers. Chill several hours.

TO SERVE - Turn into a serving dish; sprinkle with parsley.

Makes 10 to 12 servings
