Cheese-Beer Biscuits

These quick biscuits perked up with cheese, green onions, and beer will be a nice surprise for lunch or dinner. The dough is cut into squares; hence, no wasted dough or scraps to re-roll.

INGREDIENTS

2 cups all-purpose biscuit mix
1/2 cup shredded Cheddar cheese
1/4 cup minced green onion with part of tops (3 to 4 onions)
2/3 cup beer

Combine biscuit mix, cheese and green onion.

Add beer; stir with fork until dough forms a ball (it will be sticky). Turn out onto a well-floured board; knead 10 to 12 times.

Roll or pat into an even square 1/2-inch thick. Cut into 16 small squares. Place on a lightly greased baking sheet.

Bake at 450 degrees for 10 to 12 minutes, or until lightly browned. Serve warm.
