Brussels Waffles (Gaufres Bruxelloises)

These waffles are a crisp type and are often served for dessert topped with sweetened whipped cream and strawberries. They became famous at the Belgian pavilion at the 1962 New York World's Fair.

INGREDIENTS

1-3/4 cups all-purpose flour
1/8 teaspoon salt
1 can or bottle (12-ounces) beer
1/4 cup oil
1 egg, slightly beaten
1 tablespoon grated lemon peel
1/2 teaspoon lemon juice
1/2 teaspoon vanilla extract

Mix flour and salt; add remaining ingredients. Beat just until smooth.

Let batter stand 2 hours at room temperature or refrigerate overnight. (Makes waffles more tender.) Waffles may also be baked immediately.

Bake in a waffle iron, following manufacturer's directions. Spread batter thin; bake until crisp and browned. Separate waffles into sections.

Serve for dessert or breakfast. Top with sweetened whipped cream and strawberries or brown sugar.
