Beery Cheese Strata

Cut into squares and serve this dish as a pleasing entrée for brunch, lunch, or a light supper. Accompany with link sausages.

INGREDIENTS

12 slices day-old white bread
1/2 pound Cheddar cheese, shredded (2 cups)
2 tablespoons finely minced onion
4 eggs, slightly beaten
1 can (13-ounces) evaporated milk
1 can or bottle (12-ounces) beer
1/2 cup water
2 teaspoons prepared mustard
1 teaspoon salt
1/8 teaspoon pepper

Trim crusts from bread. Arrange 6 slices in a buttered 2-quart rectangular baking dish (about 11 x 7-inches).

Cover bread with half the cheese and all the onion. Add remaining bread, then remaining cheese.

Mix eggs, milk, beer, water, mustard, salt, and pepper. Pour over bread and cheese. Add a little water if liquid doesn't reach top of bread.

Refrigerate overnight, or a minimum of 2 hours.

Bake at 325 degrees for 50 minutes, or until set and lightly browned. Let stand for 15 to 20 minutes before cutting into squares for serving.
