Beef Provencale

Don't forget the orange peel -- it makes a real difference.

INGREDIENTS

2 onions, minced
Bouquet garni
Grated peel of 1 orange
3 pounds stewing beef, cut into cubes
2 cups white wine
Olive oil
2 carrots, peeled and thickly sliced
2 cups quartered mushrooms
4 tomatoes, peeled and coarsely chopped
1 cup pitted black olives
Salt and pepper

Place the onions, bouquet garni, orange peel, and beef in a large non-metallic baking dish, pour the wine over and drizzle with a little oil. Cover and marinate overnight in the refrigerator.

Arrange the carrots, mushrooms, tomatoes and olives on top of the meat, season with salt and pepper to taste, cover, and bake at 350 degrees for 2 hours.
