Beef In Herb Wine Sauce

INGREDIENTS

3 or 4 medium onions, sliced
2 tablespoons bacon drippings
3 pounds lean beef, sirloin tip, cut into 1-1/2-inch cubes
1-1/2 tablespoons flour
1 cup beef bouillon
1-1/2 cups dry, red wine
1/4 teaspoon marjoram
1/4 teaspoon thyme
1/4 teaspoon oregano
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1/2 pound fresh mushrooms, sliced lengthwise
1/4 cup butter

In a heavy skillet, sauté onions in bacon drippings until transparent, about 5 minutes; remove from pan.

Shake meat cubes and flour together in paper bag until meat is well coated. Brown meat in bacon drippings.

Add 3/4 cup beef bouillon, 1 cup wine, the herbs and seasonings; cover the pan tightly and simmer for 1-1/2 hours, gradually adding the remaining bouillon and wine.

Meanwhile, sauté mushrooms in the butter. Finally add mushrooms and onions to the meat and cook about 20 to 30 minutes longer.

Makes 6 to 8 servings

Serve with Brown Rice.
