Beef with Scrambled Eggs

You can substitute cooked pork for the beef.

INGREDIENTS

2 tablespoons vegetable oil
2 cups finely chopped cooked beef
1/3 cup finely chopped yellow onion
2 medium-size tomatoes, peeled and chopped
3 canned green chilies, seeded and finely chopped
1 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon dried oregano, crumbled
6 eggs

Heat the oil in a heavy 12-inch skillet over moderate heat for about 1 minute. Add the beef and onion, and cook, uncovered, for 5 minutes.

Add the tomatoes, green chilies, salt, cumin, and oregano to the skillet, and cook, uncovered, for 5 more minutes, or until the mixture has thickened.

Beat the eggs lightly, add them to the mixture in the skillet, and scramble the eggs until the eggs are just set - about 4 minutes. Serve with tortillas.
