INGREDIENTS
1/2 cup fine dry bread crumbs
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1-1/2 pounds lean ground beef
2 small yellow onions, peeled and finely chopped
1 tablespoon vegetable oil
1/2 cup cider vinegar
1-1/2 teaspoons chili powder
1/8 teaspoon dried oregano, crumbled
4 teaspoons Worcestershire sauce
3 medium-size tomatoes, peeled and chopped OR 1 can (1-pound) tomatoes,
chopped, with their juice
In a large bowl, combine the bread crumbs, milk, salt, and pepper. Add the beef and half the chopped onions. Mix well and shape the mixture into 6 patties, each about 1 inch thick.
Heat the oil in a heavy 12-inch skillet over moderate heat for about 1 minute. Add the patties and cook, uncovered, for 2 minutes on each side. Meanwhile, in a small bowl, combine the remaining onions, the vinegar, chili powder, oregano, Worcestershire sauce, and tomatoes. Pour the mixture over the patties and cook, uncovered, for 5 to 8 minutes, or until the sauce has thickened.
