Caviar Pie

INGREDIENTS

2 teaspoons Knox unflavored gelatin
¼ cup cold water
2 cups sour cream
2 cups small curd cottage cheese
¼ cup blue cheese, crumbled
1 package dry Italian salad dressing mix
1 bunch green onions, chopped
1 hard-boiled egg, chopped
1 (4-ounce) jar black or red caviar (or both)
1 cherry tomato, for garnish

In medium saucepan, dissolve gelatin in cold water. Then heat until clear.

Add sour cream, cottage cheese, blue cheese and salad dressing mix. Mix well.

Pour into greased quiche dish and refrigerate overnight.

Prior to serving, flip molded pie onto serving platter.

Top with green onions, boiled egg, and caviar. Garnish with cherry tomato rose in center of pie, if desired.

Serve with crackers.
