Basil Cottage Cheese Dip

For the proper creamy texture you must use a blender or food processor.

INGREDIENTS

2 cups cottage cheese
2 tablespoons vinegar
1/4 cup chopped scallions
2 tablespoons parsley
6 to 8 basil leaves, or 1 teaspoon dried, crumbled
Salt to taste
Freshly ground black pepper to taste

Purée all the ingredients in a blender or food processor. Chill.

Makes about 2 cups
