Baked Oysters

INGREDIENTS 1/4 pound butter
2 cups chopped celery
1 onion, finely chopped
1 pint oysters, cut up, with some juice
4 hard-boiled eggs, grated
2 cups toasted bread crumbs
1 cup oyster juice or water
Parsley
Salt and pepper, to taste
Cracker crumbsMelt butter; add onion and celery. Cook over low heat until tender. Add oysters and a little oyster juice; cook about 5 minutes or until oysters curl. Remove from heat and mix with toasted bread crumbs, grated eggs, and parsley. Add salt and pepper, to taste, and dampen with some oyster juice or water.
Put into oyster shells or greased pyrex dish; sprinkle cracker crumbs on top and dot with butter. Bake at 350 degrees for about 20 minutes.
Makes 4 to 6 servings
