Asian Latkes with Nuts and Gingered Sour Cream

INGREDIENTS 2-1/4 pounds potatoes
1/4 cup coarsely chopped cashews
1/4 cup flour
2 tablespoons Wasabi powder
2 eggs, beaten
Vegetable oilGINGERED SOUR CREAM
1/2 cup sour cream
2 tablespoons chopped fresh gingerroot or 1 tablespoon powdered gingerPeel and grate the potatoes. Place in a colander and set over a large bowl; squeeze out as much liquid as possible. Stir together with the nuts, flour, Wasabi, and eggs.
Heat 1 tablespoon oil in a large heavy skillet over medium-high heat. Form batter into silver dollar size patties and fry until golden brown on both sides; adding more oil and adjusting the heat as needed.
Make Gingered Sour Cream by stirring together sour cream and ginger. Serve on the side with the latkes.
