Artichoke Spread

The ingredients for this spread will have everyone guessing - some may even think it contains expensive crabmeat.

INGREDIENTS

1 jar (8-ounces) artichoke hearts
1/2 cup grated Parmesan cheese
1/2 cup mayonnaise
1 large clove garlic, peeled and minced

Preheat the oven to 350 degrees. Drain the artichoke hearts (reserve the oil and use it in a salad dressing), and chop them coarsely.

In a mixing bowl, combine the artichokes, cheese, mayonnaise, and garlic. Using a rubber spatula, scrape the mixture into an ungreased 1/2-quart baking dish and bake, uncovered, for 20 minutes or until bubbly and slightly browned.

Serve hot, warm, or chilled as a spread for crackers or toast rounds.
